Spicy Carrot Salad

Ingredients Preparation

5 grams piece fresh ginger
1 red chilli fresh option to deseed
1 clove garlic optional
400 grams Carrots, roughly chopped
50 grams almonds
40 grams Handful of Corriander leaves
1 lemon
salt to taste
10 grams extra virgin olive oil

1. Add ginger, lemon zest, chilli & garlic to TM bowl, 5 secs on speed 7.
2. Add lemon juice and remaining ingredients (except spinach) & process 3 secs on speed 5.
3. Serve on a bed of baby spinach leaves.

Tips

You may also like to add a drained tin of chickpeas stired in at the end to make it more of a meal.
Or try with cucumber and/or fresh mint.

Prawn Balls

Ingredients Preparation

1 long red chilli optional
2 spring onions
160 grams chicken breast
230 grams prawns, raw, peeled
1 egg
1/2 teaspoon white pepper
1 tablespoon salt
1 teaspoon sugar
1 teaspoon baking powder
75 grams ice cold water

1. Place chilli and spring onion into mixing bowl and chop for 10 sec/speed 7. Set aside.
2. Place chicken, prawn, egg, white pepper, salt, sugar, baking powder into mixing bowl and mince 15 sec/ speed 7.
3. Add chopped chilli, spring onions and water and mix 1.5 min.
4. Add plain flour, tapioca flour and blend 10 sec/speed 8.
5. Heat oil in a fry pan, form dough using heaped tablespoon and fry until golden or cooked.

Tips

Serve with hot or sweet chilli dipping sauce.

Steamed Italian-style Tomatoes

Ingredients Preparation

12 fresh tomatoes medium, vine ripened
30 grams parmesan cheese cubed
1 clove garlic peeled
10 sprigs fresh chives
zest of 1 lemon
100 grams bread
80 grams pitted kalamata olives
200 grams basmati rice
60 grams butter chopped

Tomatoes:
Cut the top from the tomatoes and scoop out the pulp. Use the pulp for another dish. Set into the Varoma dish and tray.
Filling:
Grind the parmesan cheese sp.8 for 10 seconds. Set aside.
Grind the garlic, chives and lemon rind sp. 7 for 4 seconds. Set aside.
Grind the bread to make breadcrumbs speed 8 for 3 seconds and set aside with the garlic, chives and lemon rind.
Chop the Olives Speed 4 for 2 seconds and add to the garlic, chives, lemon rind and breadcrumbs.
Fill TM bowl with 500ml water. Weigh rice into basket and wash rice using turbo button. Steam at 100 degrees for 30-35 minutes.Dry TM bowl.
Replace rice, breadcrumb mixture, and butter into the bowl and mix on Reverse, speed 1 until combined.
Completed Dish:
3. Spoon filling into the tomato shells and top with parmesan cheese. Rinse and fill TM bowl with 1 L water. Steam in the Varoma at Varoma temperature for 15 minutes speed 2.

Tips

Serve with warm pesto.

French Beans with Garlic and Bacon

Ingredients Preparation

1 clove garlic large
100 grams lean bacon cut into matchsticks
400 grams french beans trimmed and cut into 3 cm lengths
30 grams boiling water
salt and pepper to taste
20 grams olive oil

1. Chop garlic 2 secs speed 7
2. Cook 1min varoma temp Gentle stir setting
3. Add bacon. Saute 3 minutes varoma temp counter-clockwise operation Gentle stir setting MC OFF
4. Add beans, water, seasoning to taste. Cook 7mins varoma counter-clockwise operation Gentle stir setting MC ON
5. check tenderness and cook to your preference.

Tips

Serve hot.

Broccoli Salad

Ingredients Preparation

250 grams broccoli florets
1 red capsicum quartered
1 apple quartered
30 grams pine nuts
25 grams olive oil
15 grams white balsamic vinegar
1 teaspoon honey
1 1/2 teaspoons Dijon mustard
1 teaspoon herb salt
1/2 teaspoon pepper

1. Add all ingredients to the bowl on speed 4 for 5 seconds.

Cucumber, Mint and Lime Yogurt Sorbert

Ingredients Preparation

700 g Yogurt frozen in ice cubes pref made in TM
1 lime rind and flesh
2 kaffer lime leaves
10 mint leaves, fresh
1 Continental Cucumber in chunks
1 egg white
80 g sugar raw

1. Mill sugar 6 sec speed 9
2. Add 350g yogurt and rest of ingredients.
3. Mix Speed 9, 20 seconds
4. Add remaining yogurt and mix 1 min speed 10 or untill consistancy of sorbet is reached.
